Our food and our chefs are at the heart of everything we do at The Brasserie. Led by the renowned culinary talent of Stefan Matz, our Group Executive Chef, our team’s mission is to create dishes that make the finest of Ireland’s cuisine accessible to all. In creating The Brasserie, our team spent over twelve months researching and collaborating with suppliers, both in the locality of each restaurant and around Ireland. The result is menus that strive to offer the very best of our island’s meat, fish, and produce, paired with exceptional cocktails.

The Brasserie launched in Cork, Kilkenny, Sligo, and Athlone this June, and will be followed later this summer, by openings in Tullamore and Limerick. While indoor dining will be reserved for hotel guests for the month of June, in line with government guidelines, outdoor dining is available in each of our locations for all.
